"Ma...the meatloaf! We want it NOW!"

My husband is a big movie guy and can watch a movie one time and recite it (hence the title of this blog post!) I do not have this special talent that is for sure. "You know...that movie with the guy..." would be how I describe a scene from a movie I am trying to remember as my husband looks at me and says "Oh right...you mean THAT movie?!" And we just start laughing at how absurd I sound.


I have my mother in law, Susan, to thank for the sharing of the original meatloaf recipe. Years ago when I first started dating my husband and would have dinner a few times a week at mom's house she would make her meatloaf often. It soon became one of my favorite meals to enjoy at her house! Over the years, I wanted to put my spin on the recipe and make it my own. Then enter my keto lifestyle and finding a way to make the meatloaf recipe I had keto friendly.


And here I present the Jalapeno Popper Keto Meatloaf Cupcakes! This dish is a comfort meal for my husband and I. We probably have this at least 2 times a month. Ingredients:

1 lb (16 oz) Meatloaf/Meatball Mix

1 1/2 Cup Pork King Good Pork Rind Crumbs

1 Package (16 oz) Bacon (I use smithfield hometown original)

8 ounces Philadelphia Original Cream Cheese

1 teaspoon Tabasco Chipotle Pepper Sauce

1 Tablespoon Gulden's Spicy Brown Mustard

2 Tablespoons Heinz Sugar Free Ketchup

1 Tablespoon A1 Original Sauce

1 teaspoon Worcestershire

1 teaspoon Soy Sauce (low Sodium)

2 Large eggs

2 large Jalapeno Peppers

1/2 teaspoon Onion Powder

1/2 teaspoon Garlic Powder

1/2 teaspoon Curry Powder

1 teaspoon Italian Seasoning

2 dashes of Salt

2 dashes of Pepper


Directions:

  1. Preheat oven to 425.

  2. In a big mixing bowl, put all the ingredients minus the bacon and cream cheese to the bowl.

  3. Mix all ingredients together (I use my hands as it is easier to make sure the mixture is mixed consistently)

  4. Cut the pieces of bacon in half. You can either do this length wise to cover the top of the muffin or you can do it width wise to just cover the bottom of the muffin.

  5. Take a medium muffin tin (Holds 12 muffins) and put the bacon in the bottom of each muffin.

  6. Put half of the meatloaf mix in each muffin tin.

  7. Place a dollop of cream cheese in the center of each meatloaf cupcake.

  8. Add additional meatloaf mixture on top of the cream cheese.

  9. Wrap any additional bacon around the top of the meatloaf cupcakes.

  10. Place muffin tin in the oven and bake for 25/30 minutes.
