Chocolate (n.) A delicious cure for a bad day.

For years with my family, I have been known for the one who makes delicious, fluffy chocolate mousse. My Mum is my number one fan, with a close second being my Mother in Law, for my chocolate mousse. When I first started Keto I knew I needed to find a way to make the recipe for my chocolate mousse keto friendly.


For Christmas of this year, I made my first batch. It was delicious but it wasn't as fluffy as I would have liked it. Saturday during the blizzard, I had the time to make another batch. And this time, it came out perfect! Fluffy. Decadent. Delicious.


Ingredients:

2 cups Heavy Whipping Cream

1 cup Sugar Free Dark Chocolate Baking Chips

1 teaspoon Vanilla Extract


Directions:

  1. In a saucepan, on medium heat, put half of the whipping cream. Let heat up for about 3 minutes. Do not let boil.

  2. Slowly add in the chocolate chips and stir frequently till all chocolate is melted.

  3. Cover and place in the fridge for up to 2 hours. In the meantime, put the mixing bowl that you will be mixing the remainder of the whipping cream in, into the freezer for the same time as the chocolate mixture is in the fridge.Remove the mixing bowl from the freezer and add the remainder of the heavy whipping cream and the vanilla extract. Whip on high with electric mixer until the whipping cream starts to form stiff peaks.

  4. Add the chocolate mixture in with the whipped cream. Fold gently together till they are fully incorporated and the color is consistent.

  5. Serve chilled with a dollop of sugar free whipped cream on top.
